One of the best things about this homemade dill mayo is that it comes together with a handful of simple ingredients, many of which you probably already have on hand. Each one plays an important role in creating a creamy, bright, and well balanced sauce where the fresh dill shines. Use good quality mayonnaise as your base, and don’t skip the fresh lemon zest. It adds a burst of citrus flavour that really brings everything to life.

The magic is in the balance. Fresh dill gets to shine, while lemon juice and zest wake everything up with a pop of brightness. A little Dijon brings just enough zip, and the garlic stays in the background where it belongs, adding flavour without overpowering the herbs.

Store your homemade dill mayo in an airtight container in the refrigerator for up to 5 days. While you can enjoy it right away, I think it tastes even better after it’s had about 15 minutes to chill, giving the flavors time to meld.

Ingredients
  

  • 1 cup good quality mayonnaise
  • 2 tbsp fresh dill (finely chopped)
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 1 small garlic clove (finely grated)
  • ¼ tsp salt

  1. Add the mayonnaise, dill, lemon juice, lemon zest, Dijon mustard, garlic, salt, and pepper to a small bowl.

  2. Stir until everything is evenly combined. Taste and adjust the seasoning, if needed.

  4. Enjoy immediately, or store in an airtight container in the refrigerator for up to 5 days.

Notes

Use fresh dill whenever possible for the brightest flavour and vibrant colour. Dried dill works in a pinch, but the flavour won’t be quite as fresh.
Choose a good quality mayonnaise. Since it’s the base of the recipe, the better the mayo, the better the finished sauce.
If time allows, don’t skip the chill time. Just 15 minutes in the fridge helps the flavours meld and makes the mayo even more flavourful.
Go easy on the garlic. One small clove is plenty, allowing the fresh dill and lemon to remain the stars.
